High Protein Fruity Pudding

Homemade Granola Bars (10).png

Weekend treats are a must in my opinion. Most of us work hard through the week, we cook and prepare our food ourselves and we generally eat similar meals Monday to Friday. So on the weekend, I think it is completely understandable to want to treat yourself a little.
.
Of course, I'm not promoting an 'eat nothing during the week and binge on the weekend' approach. That kind of pattern never helped anybody. However allowing yourself a couple of days to relax, eat out, have a few things that you fancy but which you haven't eaten during the week is a very normal (and a very enjoyable!) thing. For me, this is when I'll have things like alcohol, cake, pizza, restaurant food...the things I don't really do during the week. Because having that balance makes watching what I eat and making sure my diet is primarily made up of healthy food the rest of the time so much easier.
.
With that being said, during the week I don't like to deprive myself of sweet treats completely. I definitely have a sweet tooth and I eat a pudding every night! I just don't eat cheesecake every night (as much as I'd like to). That means I have to find alternatives!
.
I found this raspberry mousse dessert recipe online recently (thanks to @jayalderton and @drmikethe2nd) and it is SO good. It is the perfect example of a low calorie, large food volume meal (meaning you get a lot of food for your calories). Which is perfect if you're hungry or you want to feel like you are indulging. The whole bowl (of which this is half!) is about 250kcals, with 30g protein! You'll never believe it though...it's made of cottage cheese. Whatever you think...don't know it till you've tried it!

▶️ 1 tub low fat cottage cheese
▶️. 1 punnet raspberries
▶️. 1 sachet sugar free jelly
▶️. boiling water

Place the berries into a bowl. Put the other ingredients into a blender and mix. Pour the liquid on top of the berries and pop in the fridge to set for a few hours (we left it overnight).

SO GOOD AND SO MUCH FOOD!

Let me know if you try it! Or if you have any great low kcal dessert options you go to during the week...let me know!
